Description
The fresh Zampone is a pure pork sausage made from a mixture of lean meat, noble fatty cuts (paunch and throat) and pigskin. The mixture is stuffed into the skin of the pig’s front hoof.
Once cooked it is excellent served hot with mashed potatoes, buttered spinaches or stewed lentils.
Zampone is prepared with artisan care using only lean meat, rind and fat. After fine grinding, salt and spices are added to give it its characteristic flavour.
How to cook the Zampone: Put the Zampone in a pot and cover it completely with cold water. Bring it to the boil, lower the flame and cook it slowly for about 3 hours- 3 hours and half. To avoid breaking the Zampone during cooking put a plate upside down on the bottom of the pot . After cooking serve it cut in thick slices .
